Ingredients:
700 gr. Water
3 gr. Sour powder
1 kg Crystal Sugar
60 gr. Glucose
150 gr. Corn flour for cooking
500 gr. Cron Flour for serving
100 gr. Olive oil
200 gr. Powdered sugar
Method:
1. In a large saucepan place the water, the dry, the sugar and the glucose, boiling them up to 107 ° C.
2. Next, dissolve the corn flour well in a little water and add it to the pot.
3. Boil over medium heat for about 1 hour, stirring constantly with a wire or ladle so that it does not stick and our temperature reaches 123-124 ° C. Our mixture is ready when it becomes heavy, thick and large blisters appear.
4. When done, turn off the heat and add the olive oil.
5. In a pan, cover its base with corn flour and empty our mixture.
6. Sprinkle the surface of the Turkish delight with icing sugar, leave to cool and stabilize for 24 hours.
7. Turn our solid mixture upside down on a cutting board that we have sprinkled with powdered sugar.
8. Sprinkle powdered sugar on the Turkish delight and then cut into small pieces around 3 cm.
9. After we cut our Turkish delights, we put all the pieces in the pan and sprinkle them with powdered sugar, mixing them with our hands.
